The deep purplush-crimson-colored bud cantaining the sterile male flowers, is born at the end of the banana sterm
holding bunches of the developed(female flowers without fertilization)
banana fruits. When all the banana fruits have formed, it is a time to
harvest the bud and put into good use as vegetable.

The raw banana blossom heart(discarding outer bracts)has an astringent sappy taste which perfectly counter-balances the very tasty flavors of pad thai. That's why pad thai is always served with a platter of fresh vegetables including wedges of banana flower. In Thai cooking, banana flower are used in tom yam soups, spicy salads, and curries.
