This well-blended tasty paste is sometimes used to flavor the popular tom yam kung soup, although not too many Thais like it. It is more popular when used to flavor stir-fried seafood dishes like phat hoi lai (stir-fried undulated surf clams).

In one of our fried noodle recipes, roasted chili paste adds a subtle mix of sweet and hot flavors to the otherwise plain fried noodles. Roasted chili paste is a ground mixture of roasted and fried ingredients like dried shrimps(fish), dried red chilies, garlic, and shallots, seasoned with fish sauce, tamarind and coconut sugar, and cooked together in oil into a thick paste. It is best to buy a bottled roasted chili paste, rather than making it yourself.
